How to Make Greek Rotini Salad Recipe

If you need a salad to-go and don’t want to fuss or muss, than this quick and easy Greek Rotini Salad is for you.

What I like about this recipe is that the vegetables offer a delicious crunch while the rotini pasta provides a wonderful al dente chew that is satisfying and filling.

And, for ease of cooking, pasta salads don’t get any simpler than this. For this recipe I choose Greek Isle favorites like cucumbers, kalamata olives, fresh feta and sun-ripened cherry tomatoes. Use tri-color (or rainbow) rotini for a beautiful presentation.

Speaking of lunches, Greek Rotini Salad is a great recipe to include in your child’s lunch box. It’s best if you use an ice pack or two to keep it chilled until lunchtime.

Start chopping the ingredients while waiting for the pasta to finish cooking, approximately 8-9 minutes.

Then dress it with a homemade olive oil and vinegar dressing or use a store-bought one like Neuman’s Own.

Mix it well and serve.

Greek Rotini Salad is perfect for picnics or lunches to-go or an easy dinner option. It holds up well as a leftover, so if you do make a large batch of it, it’ll still be delicious the next day. It’s best if you store it in the fridge in a sealed container. Enjoy!

Ingredients

  • 1 cup rainbow rotini pasta cooked
  • 1/2 cup feta crumbles
  • 1/2 cup salami sliced and quartered
  • 1/2 cup grape tomatoes halved
  • 1/2 cup celery chopped
  • 1/2 cup cucumber slices
  • 1/2 cup carrots sliced
  • 1/2 cup broccoli florets
  • 1/4 cup green onions chopped
  • 1/2 cup red pepper chopped
  • 1/8 tsp oregano
  • 2 tbsp kalamata olives chopped
  • 1/4 cup Newman’s Own Olive Oil and Vinegar Dressing

Instructions

  • Cook the rotini pasta per package instructions. Drain.
  • In a large bowl, mix all ingredients together.
  • Drizzle on Newman’s Own Olive Oil and Vinegar Dressing.
  • Mix well.
  • Serve. Enjoy!
