Start your morning out on a high note with this deliciously easy Cheesy Ham Egg and Potato Breakfast Casserole recipe that uses mashed potatoes.
You might think that this recipe sounds like something you’d make for a brunch or lunch or even brinner (breakfast for dinner)–well you can.
What you may be surprised about is the “crust” that’s made from leftover mashed potatoes.
Now don’t get me wrong, great chefs have been using leftovers for casseroles for many, many years. And no wonder. Sometimes the best foods get even better the day after.
That is the way of this easy Cheesy Ham Egg and Potato Breakfast Casserole recipe.
It all starts with a few ingredients like mashed potatoes, ham, cheese, eggs and some non-stick spray.
After spraying the baking dish with nonstick spray and preheating the oven at 400 degrees F, you press about two cups of mashed potatoes into the bottom and the sides of the casserole dish, like you would a pie crust.

Next it’s time to crack the eggs, eight to be exact. Whip them up good and pour right over the potatoes.
Once you have completed this task, add chopped ham. I like to break up the ham with my fingers into rough chunks.
To top all this is the cheese–not one kind but two – Italian Blend and 4 State Cheddar. Just one cup of each. (But if you like yours super cheesy you are welcome to add more!)
Finally it’s time to bake. For this recipe you’ll have to watch the cheese to see when it is done. I like to give it approximately 35 to 40 minutes.
It’s better to bake it a bit longer because the mashed potatoes takes a bit to heat through.
Be sure to let it cool before serving into to it. I like to wait about five minutes.
Then, dig in and enjoy!

Cheesy Ham, Egg and Potato Breakfast Casserole
- 2 cups mashed potatoes or grated potatoes
- 8 eggs beaten
- 1 cup ham chopped
- 1 cup Italian blend cheese shredded
- 1 cup 4-State Cheddar cheese shredded
- Non-stick spray
Preheat oven to 400 degrees F.
Grease a quiche baking dish with non-stick spray.
Press the mashed potatoes out into base of casserole.
Beat eggs well and pour over the potatoes.
Add ham chunks evenly around the casserole.
Sprinkle cheese over the casserole.
Bake for approximately 35-40 minutes, or until golden brown.
Remove from oven when baked through. Allow to cool for five minutes. Serve. Enjoy!
